Use a large knife to finely chop the dates on a cutting board and scrape into a medium bowl. Add the Sunday Night Sauce and stir until combined.
Use a small cookie scoop to form into balls and place on a sheet pan covered with parchment paper. Use your hands to roll into smooth balls and place back on the parchment paper. Refrigerate for 15 minutes.
Roll the chilled balls into your favorite coatings, such as chopped pistachios, pecans, cocoa powder, powdered sugar or shredded coconut. Serve chilled or at room temperature.
Tips From Eileen
Eileen’s Tips: If the balls become too sticky to roll, place them back into the refrigerator until they are fully chilled.
Store, covered in the refrigerator, for up to 5 days.
