Netflix Challenge: Create a state fair-inspired dessert on a stick
My Inspiration: Every year, my mother and I would eat our favorite treats on the first day of the Iowa State Fair. This is a combination of our favorite fair treats: the oversized Salted Nut Roll and the Nutty Bar (a slab of vanilla ice cream dipped in chocolate, rolled in chopped peanuts and served on a stick).
Line a rimmed baking sheet with parchment paper and spray with nonstick spray.
Finely chop 10 ounces of peanuts and set aside.
Arrange 6 large cookie cutters (2.5 inches in diameter) on the prepared baking sheet.
Sprinkle 6 ounces of the peanuts into the cookie cutters.
Cut the mini marshmallows in half.
Cut the butter into 1 tablespoon slices and add to the peanut butter in a microwave safe bowl. Cook in 30-second intervals on high, stirring after each one, until the butter is completely melted.
Stir with a rubber spatula until smooth.
Stir in the vanilla.
Sift in the powdered sugar, ⅓ cup at a time, stirring well to incorporate. Mixture will be quite thick. Fold in the mini marshmallows.
Press the mixture over chopped peanuts and sprinkles and shape into circles using the cookie cutter as a guide.
Press chopped peanuts and sprinkles into the tops.
Insert flat popsicle sticks into the sides.
Freeze until firm.
Melt chocolate in 30-second bursts in the microwave and drizzle over the top.
